No-Pork Kimchee

Ingredients  (Serves 3)
Soy-meat slices ……………… 90g
Onion …………..……………… 1/2
Kimchee …………..………..… 400g
Oil……………………………… Dash
Mirin …………………..………. 1 dessert spoon
Soy sauce ……………………. 2 dessert spoons
Salt …………………..……..… Pinch
For the Marinade
★Soy sauce …………………. 3 dessert spoons
★Finely grated garlic ……….. 1 clove
★Mirin …………………..……. 2 dessert spoons
★Water…………..…………… 50 ml

Method


Soak the soy slices in warm water for 30 minutes. Rinse, then squeeze out the water. Add ★items with the slices and place into a plastic bag. Leave to marinade for 4 hours.

Heat oil in a frying pan, and shallow fry the slices until they become brown and crisp. Transfer to a plate.

Slice the onion and stir-fry adding a pinch of salt. Add the konnyaku* (sliced), if you have it.


Mix in the soy slices and kimchee into the frying pan and add mirin and soy sauce. Serve

*If you can find it, konnyaku gives this dish a good texture.
