Pumpkin Salad

Ingredients(serves 3

Pumpkin……………………………………….. 1/4
Edamame(fresh/frozen)…………..……… 3 handfuls
Carrot……………..…………………………… 1/4
Soy mayo…………………..…………………. 4 dessert spoons
Salt…………………..………………………… pinch
Soya milk……………………………..………. dash

Method


Cut the pumpkin into large chunks, and steam (I use a microwave).


Meanwhile, boil the edamame if fresh; defrost if frozen. Remove from pods.


Cut the carrot finely. Steam lightly (separately from the pumpkin).


Mash the pumpkin, then add edamame, carrots and seasoning. Garnish and serve.
